Keeping it sweet; two delectable dessert recipes to wow your guests this Christmas.

If you know anything about us, you will know that we absolutely LOVE dessert. Here are two fail proof desserts that we have often used at Avontuur and at home. Impress your guests or just splurge out and make them for yourself to dig into when no one is looking. Either way they are flop proof and delicious!

Avontuur White chocolate panacotta with a mixed berry and bay leaf compote

  • 275g white chocolate, chopped
  • 600mls pure cream
  • 1/3 cup caster sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons boiling water
  • 2 teaspoons gelatine
  • 250g plain Greek Style Yogurt

Mixed Berry & Bay leaf compote

  • 450g frozen mixed berries
  • 1/3 cup caster sugar
  • 1/4 cup boiling water
  • 5 bay leaves and the zest of one orange
  • Method:
  • Place berries in a bowl. Add sugar, zest and bay leaf.  Toss to coat. Add boiling water. Stir over a low heat for 1 to 2 minutes or until sugar dissolves. Cover and refrigerate.

Best-Ever Meringues

Prep time:15 mins

Cooking time:1 hour + cooling

Makes:About 30 medium meringues

  • 4 large egg whites
  • a pinch of salt
  • 115g caster sugar
  • 115g icing sugar
  • 1 tsp vanilla extract

Heat oven to 180°C and line 2 baking trays with baking paper.

In a very clean bowl and using an electric beater, beat egg whites with salt until stiff. Add caster sugar spoon by spoon until glossy and smooth  and beat on high speed for 10 minutes. Fold in icing sugar and vanilla. Spoon small spoonfuls of mixture onto prepared trays or use a piping bag and make nests or little domes.  Place in preheated oven and . Cook for 1 hour, then turn off oven and leave meringues to cool in oven.

Tip

Up to an hour before serving, sandwich meringues together with whipped cream and decorate with berries. If desired, the whipped cream can be flavoured with a little lemon or lime curd, and you can also use  the berry compote above.  Dust lightly with with icing sugar and edible glitter.
